Grilled Balsamic Skirt Steak

  • 1½ lbs. skirt steak
  • ¼ cup balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Whisk together balsamic vinegar, olive oil, mustard, garlic, salt, and pepper. Marinate the steak for at least 1 hour (up to 8). Grill over medium-high heat for 3–4 minutes per side, depending on thickness. Let rest for 5 minutes, slice thin against the grain, and serve with grilled veggies or over a fresh salad.
